The Boggs moved to Canton from the Chicago area a few years ago to be closer to family. Passionate about brewing, the couple really liked Canton, and it’s lack of a craft brewery didn't escape them. They had starting home brewing about 3 years ago, something they very much enjoy doing together. The idea of opening their own brewery wasn't that far of a leap. Barry had been inspired by an impromptu ‘behind the scenes’ tour he’d received while visiting the New Belgium Brewery back in 2013. He’s also attended the World Brewing Academy at the famous Siebel Institute of Technology in Chicago.
As with all microbreweries opening in Michigan, the opening date was pushed back. “We certainly had some difficulties,” said Barry, when I caught up with him & Cara the night before their soft opening, “Both in obtaining the proper permits and also contractor delays.” They ended up doing most of the work in the taproom themselves. The small, comfortable, 48 seat tap room has a nice long bar and industrial theme, and the brewing equipment is on display for patrons to see.
The support for Canton Brew Works kept the Boggs’ optimistic through the delays. Their Kickstarter campaign was a success, raising $11,000 through 102 donations. They also had two successful pre-opening tasting parties, which allowed them to share their wares with their supporters, and also meet the many people excited about the opening of their brewery.
The plan is to open with six taps. “We love to experiment”, Cara said, when asked about their brewing philosophy. “The first beer we brewed together was a Molé porter.” The plan on have certain standard beers, but also many unique ones, such as the Tamarind Chili beer people were able to sample at one of the early tastings. Among the six beers on their opening day lineup were Cloud Drifter, a brown ale with coffee roasted at Canton’s Holiday Market, Alien AutHOPsy, a well-balanced Double IPA, and Twist n’ Stout, a brown stout. Their most popular beers so far has been the Shakedown Pale, which is also the first beer they brewed for the brewery. There are plans, according to Barry, to age the American stout he is currently brewing, in Rye Whiskey Barrels.
The taproom is currently open Thursday from 4pm-10pm, Friday and Saturday from 4-midnight, and Sunday from 2pm-8pm, but the Boggs’ expect to continue to expand the hours as time goes on. The plan is to start filling growlers within the next week on certain beers. The location is on Lilley, just south of Joy, right across from Mettetal Airport.
