Specificity water PH, water treatment, the mineral content of the water used, the specs of the malt, the quality of the raw materials including hops, malt, yeast propagation and the treatment of the yeast. They endeavor to make the most biological and non-biological stable beer that they can without use of any ingredients that would cause an adverse effect on the flavor of the beer and make it taste less then a fresh and original product.
